Soft Lemon Cake Recipe

Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • Powdered sugar for dusting

Directions

  1. Preheat the oven to 350°F (177°C). Grease a 9-inch cake pan with non-stick cooking spray or butter. Set aside.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream butter and sugar together with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add flour mixture, alternating with milk, beating until just combined.
  6. Stir in lemon zest and lemon juice.
  7. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool in pan for 10 minutes before removing it to a wire rack to cool completely.
  9. Dust with powdered sugar before serving.
