Sorrento Pasta Recipe

Ingredients:

  • 1 pound of pasta (penne, fusilli, or farfalle)
  • 1/4 cup of olive oil
  • 1/2 yellow onion, diced
  • 3 cloves of garlic, minced
  • 1/2 cup of Kalamata olives, pitted and sliced
  • 1/2 cup of sun-dried tomatoes, sliced
  • 1/4 cup of capers
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper to taste
  • 1/4 cup of Parmesan cheese, grated

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a large frying pan, heat the olive oil over medium heat.
  3. Add the diced onion and sauté for 3-4 minutes or until translucent.
  4. Add the minced garlic and sauté for 1 minute.
  5. Stir in the sliced olives, sun-dried tomatoes, and capers. Cook for 3-4 minutes to allow the flavors to meld together.
  6. Stir in the reserved pasta water and simmer until the sauce begins to thicken, about 5 minutes.
  7. Stir in the chopped parsley and season with salt and pepper to taste.
  8. Add the cooked pasta to the sauce and toss to combine.
  9. Top with grated Parmesan cheese and serve.
