Spicy Water Ice Cream Recipe

Ingredients:

  • 2 cups water
  • 1 cup sugar
  • 1 tablespoon red chili flakes
  • 1 teaspoon ground cinnamon
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 4 egg yolks

Instructions:

  1. Add water, sugar, red chili flakes, and cinnamon to a medium saucepan.
  2. Bring the mixture to a boil, reduce heat, and let it simmer for about 10 minutes until the mixture has thickened and reduced by a third.
  3. Add the heavy cream and vanilla extract to the saucepan and heat the mixture until it comes to a simmer.
  4. In a separate bowl, whisk the egg yolks together.
  5. Take 1/2 cup of the hot cream mixture and whisk it into the egg yolks. Repeat this process again with another 1/2 cup of the hot cream mixture.
  6. Pour the egg yolk mixture into the saucepan with the rest of the hot cream mixture and stir until everything is combined.
  7. Continue heating the mixture, stirring constantly until it thickens and coats the back of a spoon (about 10 minutes).
  8. Remove the mixture from heat and place it in the refrigerator to cool for at least 2 hours.
  9. Pour the cooled mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically 20-30 minutes.
  10. Transfer the ice cream to an airtight container and freeze for at least 2 hours or until it has the desired consistency.
