Spring Rolls Recipe

Ingredients:

  • 1 packet of spring roll pastry sheets
  • 1/2 pound of chicken breasts, thinly sliced
  • 2 cups of shredded cabbage
  • 1 cup of julienned carrots
  • 1 cup of bean sprouts
  • 1/2 cup of chopped scallions (green onions)
  • 2 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sugar
  • 1 tablespoon of cornstarch
  • 1/4 teaspoon of black pepper
  • 2 cups of vegetable oil for frying

Directions:

  1. In a wok or large skillet, heat 2 tablespoons of oil over high heat.
  2. Add in chicken and garlic, stir-fry for about 5 minutes or until the chicken is cooked through. Remove from the wok and set aside.
  3. Replace the wok or skillet to heat and add more oil. Add the shredded cabbage, carrots, bean sprouts, and scallions and stir-fry for 3-5 minutes or until they’re soft but still crispy. Remove from heat.
  4. In a bowl, mix together the soy sauce, oyster sauce, sugar, cornstarch, and black pepper.
  5. Return the wok or skillet to the heat and add the soy sauce mixture to it. stir quickly then add in the chicken and vegetable mix, stir until well combined.
  6. Set up your rolling station. Have a small dish with water. One by one, dip your spring roll sheets into the dish of water for a few seconds until they soften. Be very careful as you do this not to let them break.
  7. Place a spoonful of your vegetable and chicken mixture at the bottom of the wrapper, and roll to the middle part, then fold over the sides to the middle, tuck in the bottom to secure, and continue rolling all the way up until you reach the top of the wrapper.
  8. Heat a frying pan with enough oil to fry the spring rolls. Once the oil is hot, add in your spring rolls (in batches) and fry them until they’re golden brown. Remove from heat and drain off the extra oil on a paper towel.
  9. Serve hot with your favorite dipping sauce.

These spring rolls are the perfect appetizer or snack! Each bite is bursting with flavor from the chicken and vegetables with a little bit of crunch from the crispy wrapper. They’re also fun to make and a great way to get creative with your presentation.
