Spring Rolls – Treat Recipe

Ingredients:

  • 12 Spring roll wrappers
  • 1 Boneless chicken breast, sliced into thin strips
  • 1 Cup of shredded cabbage
  • 1/2 Cup of shredded carrots
  • 1/2 Cup of sliced mushrooms
  • 1/4 Cup of chopped scallions
  • 1 Teaspoon of minced garlic
  • 1 Teaspoon of grated ginger
  • 2 Tablespoons of soy sauce
  • 1 Tablespoon of cornstarch
  • 1 Egg
  • Vegetable oil for frying

Instructions:

  1. First, prepare the filling. In a large bowl, mix together the sliced chicken breast, shredded cabbage, shredded carrots, sliced mushrooms, chopped scallions, minced garlic and grated ginger.
  2. In a small bowl, whisk together the soy sauce and cornstarch until smooth.
  3. Pour the soy sauce mixture over the chicken and vegetable mixture and toss to combine well.
  4. Beat the egg in a small bowl and set aside.
  5. Place a spring roll wrapper on a clean, dry surface and spoon about 2 tablespoons of the chicken and vegetable filling onto the bottom corner of the wrapper.
  6. Fold the bottom corner over the filling, then fold in the sides and roll the wrapper up tightly, like a burrito. Brush the top corner of the wrapper with the beaten egg to seal the roll.
  7. Repeat with the remaining spring roll wrappers and filling.
  8. In a large heavy saucepan or wok, heat about 2 inches of vegetable oil over medium-high heat until hot but not smoking.
  9. Add the spring rolls and fry, turning occasionally, for 2-3 minutes or until golden brown and crispy.
  10. Remove with a slotted spoon and drain on paper towels.
  11. Serve hot with sweet chili sauce or soy sauce for dipping.
