Spring Rolls – Treat Recipe
Ingredients:
- 12 Spring roll wrappers
- 1 Boneless chicken breast, sliced into thin strips
- 1 Cup of shredded cabbage
- 1/2 Cup of shredded carrots
- 1/2 Cup of sliced mushrooms
- 1/4 Cup of chopped scallions
- 1 Teaspoon of minced garlic
- 1 Teaspoon of grated ginger
- 2 Tablespoons of soy sauce
- 1 Tablespoon of cornstarch
- 1 Egg
- Vegetable oil for frying
Instructions:
- First, prepare the filling. In a large bowl, mix together the sliced chicken breast, shredded cabbage, shredded carrots, sliced mushrooms, chopped scallions, minced garlic and grated ginger.
- In a small bowl, whisk together the soy sauce and cornstarch until smooth.
- Pour the soy sauce mixture over the chicken and vegetable mixture and toss to combine well.
- Beat the egg in a small bowl and set aside.
- Place a spring roll wrapper on a clean, dry surface and spoon about 2 tablespoons of the chicken and vegetable filling onto the bottom corner of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll the wrapper up tightly, like a burrito. Brush the top corner of the wrapper with the beaten egg to seal the roll.
- Repeat with the remaining spring roll wrappers and filling.
- In a large heavy saucepan or wok, heat about 2 inches of vegetable oil over medium-high heat until hot but not smoking.
- Add the spring rolls and fry, turning occasionally, for 2-3 minutes or until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with sweet chili sauce or soy sauce for dipping.
