Stewed Cod Recipe

Ingredients:

  • 2 pounds of boneless cod fillets
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, seeded and sliced into thin strips
  • 1 yellow bell pepper, seeded and sliced into thin strips
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 2 bay leaves
  • 3 cups of tomato sauce
  • 1/2 cup of white wine
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 350°F (180°C).
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, and cook for 2-3 minutes until they are soft and fragrant.
  4. Add the sliced bell peppers, oregano, thyme, bay leaves, white wine, and tomato sauce into the pot.
  5. Let the mixture come to a boil, then turn down the heat to a simmer.
  6. Stir occasionally for 5-7 minutes until the sauce thickens a bit.
  7. Place the cod fillets on top of the sauce, ensuring that they are covered well with the sauce.
  8. Add salt and pepper to taste.
  9. Cover the pot with a lid and put it into the oven.
  10. Bake for 25-30 minutes, or until the fish is flaky and tender.
  11. Serve it hot with some toasted bread or steamed rice.
