Strawberry Tiramisu

Ingredients:

  • 1 pound strawberries, diced
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 24 ladyfingers
  • 1 cup brewed espresso or strong coffee
  • 1/4 cup Kahlua or other coffee liqueur (optional)
  • Cocoa powder for dusting

Instructions:

  1. In a saucepan, combine the diced strawberries, sugar, and orange juice. Cook over medium heat until the strawberries are soft and the sugar has dissolved, about 10 minutes.
  2. Puree the strawberry mixture in a blender until smooth. Let cool to room temperature.
  3. In a bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold the whipped cream into the mascarpone mixture.
  4. Combine the brewed espresso or strong coffee and Kahlua in a shallow dish. Dip each ladyfinger into the coffee mixture, soaking them for a few seconds until they are moist but not falling apart.
  5. Arrange half of the ladyfingers in a single layer in the bottom of a 9×13 inch dish. Spread half of the mascarpone mixture on top of the ladyfingers. Spread half of the strawberry puree over the mascarpone mixture.
  6. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and strawberry puree.
  7. Cover and refrigerate for at least 4 hours, or overnight if possible.
  8. Before serving, dust the top with cocoa powder.

Serve chilled and with a fresh strawberry on top for added sweetness and presentation. This dessert is perfect for special occasions and can be paired with a cup of coffee or tea. It can serve up to 10 people.
