Strawberry Turnovers
Ingredients
- 2 cups fresh strawberries, diced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1/2 teaspoon vanilla extract
- 1 sheet puff pastry, thawed
- 1 egg, beaten
- Sanding sugar (optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine the strawberries, granulated sugar, cornstarch, and water. Cook over medium-high heat, stirring constantly, until the mixture begins to thicken.
- Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool while you prepare the puff pastry.
- Unfold the sheet of puff pastry onto a lightly floured surface. Cut it into 4 equal squares.
- Brush the edges of each square with the beaten egg. Spoon about 2 tablespoons of the strawberry mixture onto one half of each square.
- Fold the empty half of the pastry over the strawberry mixture and use a fork to press the edges together to seal.
- Place the turnovers onto the prepared baking sheet and brush the tops with the remaining beaten egg. Sprinkle with sanding sugar, if desired.
- Bake for 15-20 minutes, or until the pastry is golden brown. Serve warm or at room temperature.
