Strawberry Turnovers

Ingredients

  • 2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/2 teaspoon vanilla extract
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten
  • Sanding sugar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the strawberries, granulated sugar, cornstarch, and water. Cook over medium-high heat, stirring constantly, until the mixture begins to thicken.
  3. Remove the saucepan from the heat and stir in the vanilla extract. Let the mixture cool while you prepare the puff pastry.
  4. Unfold the sheet of puff pastry onto a lightly floured surface. Cut it into 4 equal squares.
  5. Brush the edges of each square with the beaten egg. Spoon about 2 tablespoons of the strawberry mixture onto one half of each square.
  6. Fold the empty half of the pastry over the strawberry mixture and use a fork to press the edges together to seal.
  7. Place the turnovers onto the prepared baking sheet and brush the tops with the remaining beaten egg. Sprinkle with sanding sugar, if desired.
