Stuffed Mushroom Recipe: Easy Aperitif
Ingredients:
- 16-20 button mushrooms
- 2 tablespoons olive oil
- 1/3 cup onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup red pepper, finely chopped
- 2 cloves garlic, minced
- 1/4 teaspoon dried thyme
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

- 1/4 cup chopped fresh parsley
Instructions:
- Preheat oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- Chop the mushrooms stems finely and set aside.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion, celery and red pepper and sauté for 3-5 minutes, or until softened.
- Add the chopped mushroom stems, garlic, thyme, paprika, salt and black pepper and cook for another 5 minutes, or until the mushroom stems are tender and the mixture is fragrant.
- Remove the skillet from the heat and add the breadcrumbs, parmesan cheese and parsley, stirring to combine.
- Fill each mushroom cap with the stuffing mixture.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown.
