Stuffed Mushroom Recipe: Easy Aperitif

Ingredients:

  • 16-20 button mushrooms
  • 2 tablespoons olive oil
  • 1/3 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup red pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. Chop the mushrooms stems finely and set aside.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the onion, celery and red pepper and sauté for 3-5 minutes, or until softened.
  6. Add the chopped mushroom stems, garlic, thyme, paprika, salt and black pepper and cook for another 5 minutes, or until the mushroom stems are tender and the mixture is fragrant.
  7. Remove the skillet from the heat and add the breadcrumbs, parmesan cheese and parsley, stirring to combine.
  8. Fill each mushroom cap with the stuffing mixture.
  9. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  10. Bake for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown.
