Summer Seafood Pasta

Ingredients:

  • 1 lb of pasta of your choice (spaghetti or linguine would work well)
  • 1 lb of mixed seafood (shrimp, scallops, and calamari)
  • 2 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 1/4 cup of white wine
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh basil
  • 1/4 cup of chopped fresh oregano
  • 1/2 cup of cherry tomatoes, halved
  • Salt and pepper to taste

Directions:

  1. Start by cooking the pasta according to the instructions on the box. Drain and set aside.
  2. In a large skillet, heat up the olive oil and add the minced garlic. Cook until fragrant, about 1 minute.
  3. Add the mixed seafood to the skillet and cook until they are no longer translucent, about 5 minutes.
  4. Pour in the white wine and let it reduce by half, about 3 minutes.
  5. Add in the tomatoes, parsley, basil, and oregano. Cook for another 2-3 minutes until the tomatoes have softened.
  6. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
  7. Season with salt and pepper to taste.
