Sweet Potato Beetroot Soup Recipe

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 3 medium-sized beetroots, peeled and cubed
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until soft and translucent.
  3. Add the minced garlic and sauté for another minute.
  4. Add the cubed sweet potatoes and beetroots. Stir to combine.
  5. Pour in the vegetable broth and bring to a boil.
