Tagine with Apricots, Honey and Nutmeg Recipe
Ingredients:
- 1 onion, chopped
- 2 garlic cloves, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 2-inch chunks
- 2 tablespoons olive oil
- 1/2 cup dried apricots, chopped
- 1/4 cup honey
- 1 1/2 cups chicken broth
- 3 tablespoons chopped fresh parsley
Instructions:
- In a large bowl, combine the onion, garlic, cumin, ginger, cinnamon, nutmeg, salt and black pepper. Add the chicken and stir to coat.
- In a tagine or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the chicken and cook until browned on all sides, about 8 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the dried apricots, honey and chicken broth. Bring to a boil and reduce heat to a simmer. Return the chicken to the pot and cook until the chicken is cooked through and the sauce has thickened, about 30-40 minutes.
- Sprinkle with fresh parsley before serving.
