Ingredients:

  • 1 pre-made pie crust
  • 2 large red onions, thinly sliced

  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cardo
  • 1 egg
  • 1 tablespoon water

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it into a 9-inch tart pan. Trim the excess crust from the edges.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, rosemary, salt, and pepper. Cook the onions until they are caramelized and have turned golden brown, stirring occasionally, for about 15 minutes.
  4. Once the onions are done, remove them from the heat and let them cool slightly.
  5. Sprinkle half of the feta cheese onto the bottom of the pie crust.
  6. Add the caramelized red onions on top of the feta cheese. Then add the chopped cardo on top of the onions.
  7. Sprinkle the remaining feta cheese on top of the tart.
  8. In a small bowl, beat the egg and water together. Brush this mixture onto the edges of the crust.
  9. Bake the tart for about 25 to 30 minutes, or until the crust is golden brown and the filling is hot and bubbly.
  10. Remove the tart from the oven and let it cool slightly before slicing and serving.
