Tarte Tatin with Dates

Ingredients:

  • 6 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 8-10 medjool dates, pitted and halved lengthwise
  • 1 sheet puff pastry, thawed

Instructions:

  1. Preheat oven to 375°F.
  2. Melt the butter in a 9-inch oven-proof skillet over medium heat.
  3. In a small bowl, mix together the sugar, cinnamon, and ginger. Pour the mixture over the melted butter and stir until evenly distributed.
  4. Add the halved dates to the skillet, cut side down, and cook for 5-7 minutes, or until the sugar mixture is bubbling and the dates are caramelized.
  5. Remove the skillet from heat and let cool for a few minutes. Carefully lay the sheet of puff pastry over the top of the skillet and tuck the edges around the dates. Cut a few small slits in the pastry to allow steam to escape.
  6. Bake for 25-30 minutes, or until the pastry is golden brown and puffed.
  7. Remove from the oven and let cool for 5-10 minutes. Carefully invert onto a serving plate so the dates are now on top.
