Gradually add in the ice water and whisk until the batter is smooth and free of lumps.
Dip the asparagus spears into the batter, shaking off any excess and place them gently into the hot oil. Fry for about 3-4 minutes, or until golden brown.
Remove the fritters from the oil with a slotted spoon and let them drain onto a paper towel-lined plate.
