Terrine of cherries and apricots
Ingredients:
- 2 cups pitted cherries
- 2 cups sliced apricots
- 1 cup sugar
- 1/2 cup water
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 cup heavy cream
Instructions:
- In a saucepan, mix together cherries, apricots, sugar and 1/2 cup water. Cook over medium heat until the fruit is soft and the mixture thickens, about 15 minutes. Remove from heat and let cool slightly.
- Sprinkle gelatin over 1/4 cup cold water and let stand 5 minutes. Pour the gelatin mixture into the fruit mixture and stir well.
- Whip the cream until soft peaks form. Gently fold into the fruit mixture.
- Pour the mixture into a terrine mold or loaf pan lined with plastic wrap. Refrigerate until set, at least 4 hours or overnight.
- To unmold, run a knife around the edges of the terrine. Invert onto a serving platter and remove the plastic wrap.
Serving suggestions:
Serve slices of the terrine with whipped cream and fresh cherries or apricots. The terrine can also be served with a scoop of vanilla ice cream or a dollop of crème fraîche.
