The Summer Plate – Regal Recipe

Ingredients:

  • 4 skinless, boneless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large red onion, sliced
  • 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 10-15 cherry tomatoes, halved
  • 1/4 cup chopped fresh basil leaves
  • 2 cups cooked couscous

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, mix together the sliced peppers, sliced red onion, minced garlic, olive oil, salt and black pepper until well combined.
  3. Spread the vegetable mixture on a baking sheet and grill for 5-7 minutes or until the vegetables are tender and slightly charred.
  4. Add the cherry tomatoes to the grilled vegetables and toss to combine.
  5. Meanwhile, grill the chicken breasts for about 6-7 minutes per side or until cooked through and no longer pink in the center.
  6. Let the chicken rest for a few minutes, then slice it thinly on the bias.
  7. Arrange the grilled vegetables on a serving platter and top them with sliced chicken.
  8. Sprinkle freshly chopped basil leaves over the chicken and vegetables.
  9. Serve the summer plate Regal with cooked couscous on the side.
