Ingredients:
- 1 sheet of store-bought puff pastry, thawed
- 1 cup of heavy cream
- 1 vanilla bean pod
- 1/4 cup of granulated sugar
- 2 tablespoons of cornstarch
- 1/2 cup of apricot preserves
- 1/4 cup of water
- 1 tablespoon of lemon juice
- 12 fresh apricots, pitted and sliced
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry into a thin sheet and trim the edges to fit the baking sheet. Place the pastry onto the prepared baking sheet and prick the surface all over with a fork.
- Bake the pastry in the preheated oven for 10-12 minutes, or until golden brown. Remove from the oven and set aside to cool.
- In a medium saucepan, combine the heavy cream, granulated sugar, and cornstarch. Slice open the vanilla bean pod and scrape out the seeds, adding them to the saucepan. Stir constantly over low heat until mixture thickens and coats the back of a spoon.
- In a small saucepan, combine the apricot preserves, water, and lemon juice. Cook over low heat until the preserves have melted and the mixture becomes smooth.
- Layer the sliced apricots onto the cooled pastry, then pour the vanilla cream over the top. Drizzle the apricot glaze over the cream and garnish with additional apricot slices, if desired.
- Chill the tart in the refrigerator for 1-2 hours before serving.
Verdict:
This Thin Vanilla Tart with Apricots is a light and refreshing dessert that is perfect for any occasion. The puff pastry provides a delicate, crunchy texture that complements the smooth vanilla cream and sweet apricot glaze. Definitely a crowd pleaser!
