Tian of Red Apricots from Roussillon AOP with Almonds and Pine Nuts

Ingredients

  • 10 red apricots from Roussillon AOP, pitted and cut into quarters
  • 1/2 cup sliced almonds
  • 1/2 cup pine nuts
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced almonds, pine nuts, honey, brown sugar, melted butter, and vanilla extract. Mix well to combine the ingredients.
  3. Arrange the quartered red apricots in a circular pattern at the bottom of a 9-inch (23 cm) square baking dish.
  4. Evenly pour the nut mixture over the apricots, covering the entire surface.
  5. Bake the tian for approximately 25-30 minutes or until the nuts are golden brown in color.
  6. Remove the tian from the oven and let it cool for a few minutes before serving.
