  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 2/3 cup milk
  • 1 1/2 cups heavy cream
  • 1/2 tsp pure vanilla extract
  • 1/2 cup mascarpone cheese, at room temperature
  • 1 1/2 cups freshly brewed espresso, at room temperature
  • 1/4 cup Amaretto liqueur
  • 1 cup fresh raspberries
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup pomegranate seeds
  • 24-30 ladyfingers
  • Cocoa powder for dusting

Instructions:

  1. Place the egg yolks and sugar in a large bowl and whisk until pale and creamy.
  2. In a small saucepan, heat the milk until just simmering.
  3. Slowly pour the hot milk over the egg mixture and whisk constantly until combined.
  4. Transfer the egg mixture back into the saucepan and cook over low heat for 10-15 minutes, stirring constantly with a wooden spoon until the mixture thickens and coats the back of the spoon.
  5. Remove the pan from the heat and set aside to cool.
  6. In a large bowl, whip the cream and vanilla extract until stiff peaks form.
  7. In a separate bowl, whisk the mascarpone cheese until smooth and creamy.
  8. Add the cooled egg mixture to the mascarpone cheese and whisk until well combined.
  9. Gently fold in the whipped cream using a spatula.
  10. In a shallow bowl, mix the espresso and Amaretto liqueur together.
  11. Quickly dip each ladyfinger in the espresso mixture and arrange them in a single layer on the bottom of a large rectangular serving dish.
  12. Spoon half of the mascarpone mixture over the ladyfingers.
  13. Sprinkle half of the berries and pomegranate seeds evenly over the mascarpone mixture.
  14. Cover with another layer of espresso-soaked ladyfingers, followed by the remaining mascarpone mixture.
  15. Top with the remaining berries and pomegranate seeds.
  16. Cover the tiramisu and refrigerate for at least 4 hours or overnight to allow the flavors to meld together.
  17. Dust with cocoa powder just before serving.
