Tofu Nuggets
Ingredients:
- 1 block of firm or extra firm tofu, drained and pressed
- 1/3 cup breadcrumbs
- 1/3 cup nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp salt
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened plant-based milk
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
Instructions:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix together breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, and salt.
- Cut the tofu block into nugget-sized pieces. Dredge each piece in flour, then dip it into the plant-based milk mixed with apple cider vinegar, then coat it in the breadcrumb mixture.
- Place the coated nuggets onto the prepared baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes, flipping the nuggets halfway through, until golden brown and crispy on both sides.
- Once done, remove from the oven and let cool for a few minutes before serving.
Serving Suggestions:
Serve the tofu nuggets with a dipping sauce of your choice, such as barbecue or honey mustard. They also pair well with a side of roasted vegetables or a garden salad for a complete meal. These nuggets are perfect for a vegetarian or vegan-friendly appetizer or snack.
