Tofu Nuggets

Ingredients:

  • 1 block of firm or extra firm tofu, drained and pressed
  • 1/3 cup breadcrumbs
  • 1/3 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened plant-based milk
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil

Instructions:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix together breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, and salt.
  3. Cut the tofu block into nugget-sized pieces. Dredge each piece in flour, then dip it into the plant-based milk mixed with apple cider vinegar, then coat it in the breadcrumb mixture.
  4. Place the coated nuggets onto the prepared baking sheet and drizzle with olive oil.
  5. Bake for 20-25 minutes, flipping the nuggets halfway through, until golden brown and crispy on both sides.
  6. Once done, remove from the oven and let cool for a few minutes before serving.

Serving Suggestions:

Serve the tofu nuggets with a dipping sauce of your choice, such as barbecue or honey mustard. They also pair well with a side of roasted vegetables or a garden salad for a complete meal. These nuggets are perfect for a vegetarian or vegan-friendly appetizer or snack.
