Traditional Kouign amann Recipe

Ingredients:

  • 2 cups of flour
  • 1/2 teaspoon of salt
  • 1 tablespoon of active dry yeast
  • 3/4 cup of warm water
  • 1 cup of cold butter

Instructions:

  1. In a large mixing bowl, add flour and salt. Make a well in the center of the flour and add active dry yeast.
  2. Pour warm water into the well and gently mix until flour is combined and dough is formed. Knead the dough for 10 minutes until it is smooth and elastic.

  6. Dust the work surface with flour and carefully roll out the dough into a large rectangle. Place the block of butter in the center of the dough and fold the edges of the dough to enclose the butter block completely, sealing the edges tightly.
  7. Roll the dough out again into a large rectangle, then sprinkle the sugar evenly across the dough.
  8. Roll the dough lengthways into a tight spiral, then cut it into eight equal pieces.
  9. Place the pieces cut side up on the prepared baking sheet, leaving space for them to expand. Cover with a kitchen towel and let rest for 15 minutes.
  10. Bake the Kouign amann for 20-25 minutes or until golden, cripsy and caramelized. Remove from the oven and let cool on a wire rack.
