Turkish Borek: Cheese Pie

Ingredients:

  • 1 pound phyllo dough
  • 1 cup feta cheese
  • 1 cup ricotta cheese
  • 2 eggs
  • 1/2 cup chopped parsley
  • Salt and pepper to taste
  • 1/2 cup unsalted butter, melted

Instructions:

  1. Preheat the oven to 375°F.
  2. In a bowl, mix feta cheese, ricotta cheese, eggs, parsley, salt and pepper. Set aside.
  3. Prepare a buttered 9-inch square pan.
  4. Place one sheet of phyllo dough in the pan, brush with melted butter.
  5. Repeat until you have 8 layers of phyllo sheets.
  6. Add the cheese mixture over the phyllo layers.
  7. Add one layer of phyllo sheet over the cheese mixture. Brush with melted butter.
  8. Repeat with the remaining phyllo sheets
  9. Brush the top with melted butter.
  10. Bake for 45-50 minutes or until golden brown.
  11. Remove from the oven and let it cool for 10 minutes before serving.

Serving Suggestions:

Serve warm with a side of Turkish salad or roasted vegetables. You can also drizzle some honey on top for a sweeter flavor. Turkish borek is perfect for breakfast or as an appetizer.
