Turkish Borek: Cheese Pie
Ingredients:
- 1 pound phyllo dough
- 1 cup feta cheese
- 1 cup ricotta cheese
- 2 eggs
- 1/2 cup chopped parsley
- Salt and pepper to taste
- 1/2 cup unsalted butter, melted
Instructions:
- Preheat the oven to 375°F.
- In a bowl, mix feta cheese, ricotta cheese, eggs, parsley, salt and pepper. Set aside.
- Prepare a buttered 9-inch square pan.
- Place one sheet of phyllo dough in the pan, brush with melted butter.
- Repeat until you have 8 layers of phyllo sheets.
- Add the cheese mixture over the phyllo layers.
- Add one layer of phyllo sheet over the cheese mixture. Brush with melted butter.
- Repeat with the remaining phyllo sheets
- Brush the top with melted butter.
- Bake for 45-50 minutes or until golden brown.
- Remove from the oven and let it cool for 10 minutes before serving.
Serving Suggestions:
Serve warm with a side of Turkish salad or roasted vegetables. You can also drizzle some honey on top for a sweeter flavor. Turkish borek is perfect for breakfast or as an appetizer.
