Vanilla and Currant Magic Cake Recipe

Ingredients

  • 4 eggs
  • 1 cup granulated sugar
  • 1 stick unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 cups milk, warm
  • 1/2 cup dried currants
  • confectioner’s sugar for dusting

Instructions

  1. Preheat oven to 325°F. Grease a 9 inch cake pan and set aside.
  2. In a large bowl, beat the eggs and sugar together until light and pale yellow, about 3-4 minutes.
  3. Slowly add in the melted and cooled butter, followed by the vanilla extract.
  4. Grdually mix in the flour, alternating with the 2 cups of warm milk, and beating well until smooth.
  5. Add in the dried currants and mix until well incorporated.
  6. Pour the batter into the prepared cake pan and bake for 60-75 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cake cool completely in the pan before removing and dusting with confectioner’s sugar.
