Vegan bulgur salad

Vegan Bulgur Salad Recipe

Ingredients:

  • 1 cup bulgur wheat
  • 2 cups water
  • 2 medium cucumbers, peeled and chopped
  • 2 medium tomatoes, chopped
  • 1 red onion, finely chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

  1. In a pot, bring the water to a boil. Add the bulgur wheat, stir, and then reduce heat to low and cover. Let it simmer for about 15 minutes or until the water is absorbed and the bulgur is tender.
  2. Once the bulgur is cooked, transfer it to a large bowl and allow it to cool down.
  3. Add the chopped cucumbers, tomatoes, red onion, parsley, and mint to the bowl of bulgur. Gently mix everything together.
  4. In a separate bowl, mix together the lemon juice, olive oil, ground cumin, salt, and pepper. Pour this dressing over the bulgur salad and toss together until everything is evenly coated.
  5. Refrigerate for at least an hour before serving, to allow the flavors to blend together.

Verdict:

This vegan bulgur salad is a flavorful and healthy choice for those who are looking for a light and refreshing meal. The fresh vegetables and aromatic herbs pair nicely with the nutty and chewy bulgur, while the tangy and slightly spicy dressing brings everything together in a delightfully zesty way.

Serving suggestions:

This bulgur salad is perfect as a light lunch or side dish. If you want to make it a little heartier, you could add some cooked chickpeas or grilled chicken on top. You can also serve it alongside some pita bread or crackers for some extra crunch. Enjoy!
