Vegetable Soup Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 medium carrot, diced
- 2 celery stalks, diced
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 1 red bell pepper, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 4 cups vegetable broth
- 1 can diced tomatoes, drained
- 1 cup canned white beans, drained and rinsed
- Salt and pepper to taste
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic and cook until the onion is translucent.
- Add the carrots, celery, zucchini, yellow squash, and red bell pepper and cook for 5-7 minutes, until the vegetables are slightly softened.
- Add thyme, rosemary, and oregano and stir to combine.
- Pour in the vegetable broth and bring to a simmer.
- Add the diced tomatoes and white beans.
- Simmer for 15-20 minutes, until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot.
