Vegetable Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 red bell pepper, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 can diced tomatoes, drained
  • 1 cup canned white beans, drained and rinsed
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic and cook until the onion is translucent.
  3. Add the carrots, celery, zucchini, yellow squash, and red bell pepper and cook for 5-7 minutes, until the vegetables are slightly softened.
  4. Add thyme, rosemary, and oregano and stir to combine.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the diced tomatoes and white beans.
  7. Simmer for 15-20 minutes, until the vegetables are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot.

This vegetable soup is hearty and healthy, perfect for a satisfying lunch or dinner. You can serve it with a slice of crusty bread or top it with a dollop of sour cream.
