Velouté of endives: recipe without bitterness (6 steps)

Velouté of Endives Recipe

Ingredients:

  • 4 large endives
  • 3 medium potatoes
  • 1 large onion
  • 4 cups of chicken broth
  • 1 cup of heavy cream
  • 3 tbsp of butter
  • Salt
  • Pepper

Instructions:

  1. Peel and chop the onion and the potatoes into small pieces.
  2. Melt the butter in a large pot and sauté the onion until it’s translucent.
  3. Add the endives and potatoes to the pot and season with salt and pepper. Sauté the vegetables for 5-10 minutes, stirring occasionally.
  4. Add the chicken broth to the pot and bring it to a boil. Reduce the heat and let it simmer for 30 minutes or until the vegetables are tender.
  5. Puree the vegetables in a blender until smooth. Add the heavy cream and blend again until well combined.
  6. Pour the velouté back into the pot and heat it over medium heat until it’s hot. Serve immediately.

Verdict:

This velouté of endives is creamy, flavorful, and well-balanced. Thanks to the potatoes and the cream, the bitterness of the endives is softened, and the soup has a delicate and smooth texture. This recipe is perfect for a cozy winter dinner or as a starter for a festive meal.

Serving Suggestions:

  • Serve the soup hot in bowls with a drizzle of olive oil or a dollop of sour cream on top.
  • Serve the soup with toasted croutons or bread for a hearty meal.
  • Garnish the soup with chopped chives, parsley, or bacon bits for extra flavor.
