Venetian Style Cod Recipe

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 3 tablespoons olive oil
  • 1 white onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried rosemary
  • 1/2 cup white wine
  • 1/4 cup tomato sauce
  • 1/4 cup chicken broth
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions:

  1. Season cod fillets with salt and pepper on both sides.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side until they are golden brown. Transfer them to a plate and set them aside.
  3. Reduce the heat to medium and add the remaining olive oil to the same skillet. Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened.
  4. Add minced garlic to the skillet and cook for an additional minute.
  5. Add dried oregano and rosemary, and cook for one minute.
  6. Pour white wine into the skillet and stir well. Bring to a boil and let it reduce for a couple of minutes.
  7. Add tomato sauce, chicken broth, and lemon slices to the skillet, and stir everything together.
  8. Return the cod fillets to the skillet, spoon some of the sauce over them, and cook for an additional 5-6 minutes until the cod is cooked through.
  9. Serve with additional lemon slices and garnish with fresh herbs if desired.
