Walnut and Caramel Tart

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (180°C).
  2. In a food processor, pulse together the flour, 1/2 cup butter, granulated sugar, and salt until the mixture resembles coarse sand.
  3. Add chopped walnuts and pulse a few more times to combine.
  4. Press the mixture into a 9-inch tart pan with a removable bottom, making sure the crust comes up the sides as well. Prick the bottom of the crust all over with a fork.
  5. Bake for 20-25 minutes, until golden brown. Let cool while you make the caramel.
  6. In a medium saucepan, melt the 1/2 cup of butter and brown sugar over medium heat. Bring to a boil and let cook for about 2 minutes, stirring constantly with a wooden spoon.
  7. Add the heavy cream and continue stirring until the mixture thickens and coats the back of the spoon.
  8. Remove from heat and stir in the vanilla extract.
  9. Pour the caramel into the cooled tart crust and smooth out with a spatula.
  10. Chill the tart in the refrigerator for 2 hours before serving.
