Warm Tomato Salad with Feta, Pan-fried

Ingredients:

  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/2 cup loosely packed fresh parsley leaves, roughly chopped
  • Salt and pepper, to taste

Instructions:

  1. Halve the cherry tomatoes and season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the tomatoes and fry, stirring occasionally, until soft and caramelized, about 5-7 minutes.
  3. Mix the balsamic vinegar and honey in a small bowl until fully combined.
  4. Once the tomatoes are caramelized, remove the skillet from heat and pour the vinegar and honey mixture over the warm tomatoes. Toss the tomatoes to coat them well.
  5. Sprinkle the crumbled feta cheese over the top of the seasoned tomatoes and mix gently. Reserve a little bit of the feta to sprinkle on top later.
  6. Finish by garnishing the salad with chopped parsley leaves and additional feta cheese.

Serving Suggestions:

This salad is best served warm and as a side dish. Its sweet and tangy notes go well with grilled chicken or fish. You may also serve this as a light lunch or dinner by adding some arugula leaves and crusty bread. Enjoy!
