Warm Tomato Salad with Feta, Pan-fried
Ingredients:
- 2 cups cherry tomatoes
- 2 tbsp olive oil
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1/2 cup loosely packed fresh parsley leaves, roughly chopped
- Salt and pepper, to taste
Instructions:
- Halve the cherry tomatoes and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the tomatoes and fry, stirring occasionally, until soft and caramelized, about 5-7 minutes.
- Mix the balsamic vinegar and honey in a small bowl until fully combined.
- Once the tomatoes are caramelized, remove the skillet from heat and pour the vinegar and honey mixture over the warm tomatoes. Toss the tomatoes to coat them well.
- Sprinkle the crumbled feta cheese over the top of the seasoned tomatoes and mix gently. Reserve a little bit of the feta to sprinkle on top later.
- Finish by garnishing the salad with chopped parsley leaves and additional feta cheese.
Serving Suggestions:
This salad is best served warm and as a side dish. Its sweet and tangy notes go well with grilled chicken or fish. You may also serve this as a light lunch or dinner by adding some arugula leaves and crusty bread. Enjoy!
