White Taramasalata Soup with Lemongrass Recipe

Ingredients

  • 1 cup White Taramasalata
  • 4 cups Chicken Stock
  • 1 lemongrass stalk, bruised
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add garlic and onion and saute until soft and translucent, for about 5 minutes.
  2. Add chicken stock, white taramasalata, lemongrass, salt and white pepper to the pot and bring to a boil.
  3. Reduce heat to low, cover and simmer for 10 minutes.
  4. Turn off heat and remove lemongrass from the pot.

  6. Transfer the soup back to the pot and return it to medium heat.
  7. Stir in the heavy cream and cook for an additional 2 minutes until heated through.
  8. Remove from heat and serve hot.
