White Taramasalata Soup with Lemongrass Recipe
Ingredients
- 1 cup White Taramasalata
- 4 cups Chicken Stock
- 1 lemongrass stalk, bruised
- 2 garlic cloves, minced
- 1 onion, chopped
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/2 cup heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat. Add garlic and onion and saute until soft and translucent, for about 5 minutes.
- Add chicken stock, white taramasalata, lemongrass, salt and white pepper to the pot and bring to a boil.
- Reduce heat to low, cover and simmer for 10 minutes.
- Turn off heat and remove lemongrass from the pot.

- Transfer the soup back to the pot and return it to medium heat.
- Stir in the heavy cream and cook for an additional 2 minutes until heated through.
- Remove from heat and serve hot.
