Whoopies Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar

Directions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, cream butter and granulated sugar together until light and fluffy.

  7. Bake for 12-14 minutes.
  8. In a separate bowl, mix together peanut butter and powdered sugar until well combined.
  9. Once the cookies have cooled, spread the peanut butter mixture on the bottom of one cookie and top it with another cookie.
  10. Repeat until all cookies have been paired with peanut butter filling.
