Zucchini fritters

Zucchini Fritters Recipe

Ingredients:

  • 2 medium zucchinis grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons milk
  • 2 tablespoons olive oil

Instructions:

  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to remove excess water.
  2. In a medium bowl, whisk together the flour, Parmesan cheese, garlic powder, salt, and black pepper.
  3. In a small bowl, whisk together the egg and milk.
  4. Squeeze the zucchini to remove any remaining water and add it to the dry ingredients. Stir until the zucchini is well-coated.
  5. Add the egg mixture and stir until the ingredients are well combined and a batter forms.
  6. Heat the olive oil in a large non-stick skillet over medium heat.
  7. Using a tablespoon, drop the zucchini mixture into the hot oil, flattening it slightly with the back of the spoon.
  8. Cook until golden brown, about 3 minutes per side.
  9. Remove from the pan and place on a paper towel-lined plate to absorb any excess oil.
  10. Serve immediately, garnished with fresh parsley and a dollop of sour cream or tzatziki sauce.

Verdict

Zucchini fritters are a delicious and healthy side dish or snack. They are crispy on the outside and tender on the inside, with a subtle zucchini flavor that is complemented by the Parmesan cheese and spices.
