Zucchini stuffed with mozzarella cheese

Ingredients:

  • 4 medium-sized zucchinis
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 375°F.
  2. Cut off the stem end of the zucchinis and slice in half lengthwise.
  3. Scoop out the seeds and flesh to create a hollow center.
  4. In a bowl, mix together the mozzarella cheese, Parmesan cheese, bread crumbs, garlic, oregano, salt and black pepper.
  5. Divide the cheese mixture evenly among the zucchini halves, packing the filling firmly into the cavities.
