Ingredients:

  • 1 lb. asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 package pie crust dough
  • 1 egg, beaten

Instructions:

  1. Preheat the oven to 375°F.
  2. In a medium bowl, mix together the ricotta, Parmesan, chives, garlic, olive oil, salt, and pepper.
  3. Add the asparagus pieces and mix well.
  4. Roll out the pie crust dough and cut out circles that are about 4 inches in diameter. You should be able to get about 8 circles from the dough.
  5. Place each circle of dough into a muffin tin, pressing it down gently so it forms a little cup.
  6. Spoon the asparagus mixture into each cup, filling it to the top.
  7. Brush the beaten egg over the edges of the pie crusts.
  8. Bake for 25-30 minutes, or until the pies are golden brown and crispy.
  9. Let the asparagus pies cool for a few minutes before serving.
