Avocado Cream Wraps

Ingredients:

  • 1 large avocado
  • 2 tablespoons Greek yogurt
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1/2 teaspoon fresh chopped cilantro
  • 2-4 large tortilla wraps
  • 2 cups cooked chicken, shredded or cubed
  • 1 cup romaine lettuce, shredded

Instructions:

  1. In a small bowl, mash avocado with a fork until creamy.
  2. Stir in yogurt, lemon juice, cumin, salt and pepper until combined.
  3. Stir in cilantro.
  4. Spread a spoonful of the avocado mixture onto each wrap.
  5. Top with chicken and lettuce.
  6. Roll tightly and then cut in half before serving.
