Buns stuffed with Eggs and Mushrooms

Ingredients:

  • 1 package of dinner rolls (12 rolls)
  • 4 eggs
  • 1 cup chopped mushrooms
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

  1. Preheat the oven to 350F.
  2. Place dinner rolls on a baking sheet and set aside.
  3. Melt the butter in a skillet over medium-high heat.
  4. Add the mushrooms, onions, and bell peppers.
  5. Cook until the vegetables are softened, about 5 minutes.
  6. In a mixing bowl, whisk together eggs, salt, and black pepper.
  7. Add the egg mixture to the skillet and stir frequently until the eggs are cooked to your preference.
  8. Remove the skillet from heat and let it cool for a couple of minutes.
  9. Cut the tops off each dinner roll and set them aside.
  10. Hollow out each roll, making sure to leave about 1/4 inch thick of bread around the edge of the roll.
  11. Spoon about 1 tablespoon of egg mixture into each roll, and repeat until the rolls are filled.
  12. Sprinkle shredded cheddar cheese on top of each roll.
  13. Replace the tops of each roll.
  14. Bake in the oven for 8-10 minutes or until the cheese is melted and the rolls are lightly browned.
  15. Serve warm.
