Buns stuffed with Eggs and Mushrooms
Ingredients:
- 1 package of dinner rolls (12 rolls)
- 4 eggs
- 1 cup chopped mushrooms
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup shredded cheddar cheese
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions:
- Preheat the oven to 350F.
- Place dinner rolls on a baking sheet and set aside.
- Melt the butter in a skillet over medium-high heat.
- Add the mushrooms, onions, and bell peppers.
- Cook until the vegetables are softened, about 5 minutes.
- In a mixing bowl, whisk together eggs, salt, and black pepper.
- Add the egg mixture to the skillet and stir frequently until the eggs are cooked to your preference.
- Remove the skillet from heat and let it cool for a couple of minutes.
- Cut the tops off each dinner roll and set them aside.
- Hollow out each roll, making sure to leave about 1/4 inch thick of bread around the edge of the roll.
- Spoon about 1 tablespoon of egg mixture into each roll, and repeat until the rolls are filled.
- Sprinkle shredded cheddar cheese on top of each roll.
- Replace the tops of each roll.
- Bake in the oven for 8-10 minutes or until the cheese is melted and the rolls are lightly browned.
- Serve warm.
