Charlotte de Chamonix – Regal
Ingredients:
- 1 pound sponge or ladyfingers
- 1 pint heavy cream
- 1/4 cup sugar
- 1/4 cup Kirsch or other fruit flavored brandy
- 1 cup fresh raspberries
- 1 cup fresh blueberries
- A handful of fresh mint leaves
Instructions:
- Line the bottom and sides of a 9-inch springform pan with parchment paper.
- Cut the sponge or the ladyfingers into small pieces and layer them in the bottom of the pan. Reserve some pieces for later use.
- In a large bowl, whip the heavy cream and sugar together until stiff peaks form.
- Add the Kirsch and whisk again until well combined.
- Add half of the fresh raspberries and blueberries to the whipped cream mixture and fold gently until combined.
- Pour half of the whipped cream mixture over the sponge layer in the pan.
- Add a layer of reserved sponge or ladyfingers pieces on top of the whipped cream layer.
- Pour the rest of the whipped cream mixture over the sponge layer.
- Add the remaining raspberries and blueberries on top, and garnish with the fresh mint leaves.
- Refrigerate for at least 2 hours or overnight.
- To serve, remove the parchment from the sides of the pan and gently slide the Charlotte onto a serving plate.
