Charlotte de Chamonix – Regal

Ingredients:

  • 1 pound sponge or ladyfingers
  • 1 pint heavy cream
  • 1/4 cup sugar
  • 1/4 cup Kirsch or other fruit flavored brandy
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • A handful of fresh mint leaves

Instructions:

  1. Line the bottom and sides of a 9-inch springform pan with parchment paper.
  2. Cut the sponge or the ladyfingers into small pieces and layer them in the bottom of the pan. Reserve some pieces for later use.
  3. In a large bowl, whip the heavy cream and sugar together until stiff peaks form.
  4. Add the Kirsch and whisk again until well combined.
  5. Add half of the fresh raspberries and blueberries to the whipped cream mixture and fold gently until combined.
  6. Pour half of the whipped cream mixture over the sponge layer in the pan.
  7. Add a layer of reserved sponge or ladyfingers pieces on top of the whipped cream layer.
  8. Pour the rest of the whipped cream mixture over the sponge layer.
  9. Add the remaining raspberries and blueberries on top, and garnish with the fresh mint leaves.
  10. Refrigerate for at least 2 hours or overnight.
  11. To serve, remove the parchment from the sides of the pan and gently slide the Charlotte onto a serving plate.
