Cheese Spring Rolls Recipe

Ingredients:

  • 10 spring roll wrappers
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup diced green onions
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups vegetable oil for frying

Instructions:

  1. In a large bowl, mix together cheddar cheese, mozzarella cheese, green onions, red and yellow bell pepper, cilantro, olive oil, salt, and pepper until well combined.
  2. Place one spring roll wrapper on a clean work surface and spoon 1-2 tablespoons of cheese filling in the center of the wrapper.
  3. Fold the bottom edge of the wrapper up over the filling, then tuck in the sides and roll up tightly to enclose the filling inside.
  4. Repeat with the remaining spring roll wrappers and cheese filling.
  5. Heat vegetable oil in a large skillet or wok over medium-high heat.
  6. Add the spring rolls in batches and cook, turning occasionally, for 2-3 minutes or until golden brown and crispy.
  7. Transfer the spring rolls to a paper towel-lined plate to drain excess oil.
  8. Serve hot with your favorite dipping sauce.
