  • For the Filling:
  • 4 8-oz packages of Cream Cheese, softened
  • 1 and 1/4 cups of Granulated Sugar
  • 1 tsp. of Vanilla Extract
  • 4 Eggs, room temperature
  • 1/3 cup of Heavy Cream

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the graham cracker crumbs, sugar and melted butter until well combined. Press the mixture onto the bottom of a 9-inch springform pan.
  3. Bake the crust for about 10 minutes, or until lightly golden in color. Set aside to cool.
  4. In a large bowl, beat the cream cheese until it becomes smooth.
  5. Add in the sugar and vanilla extract, and mix well.
  6. Beat in the eggs, one at a time, making sure each egg is well combined before adding the next.
  7. Finally, add in the heavy cream and mix until everything is well combined.
  8. Pour the mixture onto the crust and smooth it out with a spatula.
  9. Bake the cheesecake for about 45-50 minutes or until the edges are slightly browned and the center is set, but still slightly jiggly.
  10. Let the cheesecake cool completely at room temperature before placing it in the fridge to chill for at least 4 hours or overnight.
  11. Serve chilled with your favorite toppings, such as strawberries or chocolate sauce, if desired.
