Coconut, Pistachio and Chocolate Cakes

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup roasted pistachios, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F. Grease and flour a 12-cup muffin tin.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, coconut flakes, and pistachios.
  3. In a separate bowl, beat sugar and butter until light and fluffy. Add eggs, one at a time, and beat until well combined.
  4. In a measuring cup, whisk together milk and vanilla extract.
  5. Gradually add flour mixture and milk mixture to the butter mixture, beginning and ending with the flour mixture. Beat until just combined.
