Fried Smelts Recipe

Ingredients

  • 1 lb fresh smelts, cleaned and gutted
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup milk
  • 1 egg, beaten
  • Vegetable oil, for frying

Instructions

  1. In a shallow bowl, whisk together flour, salt, pepper, cayenne pepper, garlic powder, and onion powder.
  2. In another shallow bowl, whisk together milk and beaten egg.
  3. Dip each smelt in the flour mixture, then in the milk mixture, and then back in the flour mixture. Shake off excess flour.
  4. In a large skillet, heat 1/2 inch of vegetable oil over medium heat. Once hot, fry smelts in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
