Fried Smelts Recipe
Ingredients
- 1 lb fresh smelts, cleaned and gutted
- 1 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 cup milk
- 1 egg, beaten
- Vegetable oil, for frying
Instructions
- In a shallow bowl, whisk together flour, salt, pepper, cayenne pepper, garlic powder, and onion powder.
- In another shallow bowl, whisk together milk and beaten egg.
- Dip each smelt in the flour mixture, then in the milk mixture, and then back in the flour mixture. Shake off excess flour.
- In a large skillet, heat 1/2 inch of vegetable oil over medium heat. Once hot, fry smelts in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
