Ginger Cake – Delight Recipe

Ingredients:

  • 1 cup flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brown sugar
  • 1/3 cup molasses
  • 1/3 cup hot water
  • 1 large egg, beaten

Directions:

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch cake pan with butter.
  3. In a small bowl, mix the flour, ground ginger, baking powder, baking soda and salt. Set aside.
  4. In a large bowl, cream the butter and brown sugar with an electric mixer until light and fluffy.
  5. Add the molasses and hot water to the butter mixture and continue to mix until well combined.
  6. Beat in the egg.
  7. Slowly add the flour mixture to the wet ingredients and mix until well combined.
  8. Pour the cake batter into the prepared pan and bake for 35-40 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
