Homemade Marshmallows Recipe

Ingredients:

  • 3 packets of unflavored gelatin
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/2 cup cornstarch

Instructions:

  1. In a large mixing bowl, combine the gelatin and cold water. Let it sit for 10 minutes until it solidifies.
  2. In a medium saucepan over medium heat, combine the granulated sugar, corn syrup, and salt. Stir until the sugar dissolves and the mixture comes to a boil. Once the mixture starts to boil, stop stirring.
  3. Using a candy thermometer, heat the mixture until it reaches 240°F (116°C). This should take about 7-8 minutes.
  4. Remove the saucepan from the heat. Turn on your mixer to low speed and slowly pour the hot sugar mixture into the bowl with the gelatin mixture. Increase the speed of the mixer to high and mix for about 10-15 minutes until the mixture becomes thick and white.
  5. After the mixture has thickened, add the vanilla extract and mix for an additional minute.
  6. In a small bowl, combine the powdered sugar and cornstarch. Use this mixture to dust a 9×13 inch baking dish.
  7. Pour the marshmallow mixture into the prepared baking dish and smooth out the top. Dust the top with more of the powdered sugar and cornstarch mixture.
  8. Let the marshmallows set at room temperature for at least 4 hours, or overnight.
  9. Once the marshmallows have set, remove them from the baking dish onto a cutting board dusted with the powdered sugar and cornstarch mixture.
  10. Cut the marshmallows into small squares or use cookie cutters to cut out shapes.
