Light Strawberry-Basil Mousse Recipe

Ingredients:

  • 1 cup fresh strawberries
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1/4 cup fresh basil leaves
  • 1/4 cup water
  • 1 1/2 tsp gelatin powder
  • 1 cup crushed butter cookies
  • 4 tbsp unsalted butter, melted

Directions:

  1. Puree strawberries and basil leaves in a blender
  2. In a saucepan, heat the puree mixture, 1/4 cup of sugar, and 1/4 cup of water over medium heat. Stir occasionally until sugar has dissolved. Remove from heat and let it cool.
  3. Place 1 1/2 tsp of gelatin powder in a small bowl and mix with 4 tbsp of cold water. Let it rest for 5 minutes
  4. In a mixing bowl, beat 1/2 cup of heavy cream until soft peaks form
  5. Once the strawberry mixture has cooled down, pour the gelatin mixture and stir until it dissolves completely
  6. Slowly add the strawberry mixture to the whipped cream and beat until everything is well combined
  7. In a separate mixing bowl, combine 1 cup of crushed butter cookies with 4 tbsp of melted unsalted butter
  8. Press the cookie mixture onto the base of serving glasses
  9. Pour the mousse mixture over the cookie base and let it chill in the fridge for at least 2 hours
  10. Serve chilled with fresh strawberries and basil leaves for garnish
