Light Strawberry-Basil Mousse Recipe
Ingredients:
- 1 cup fresh strawberries
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1/4 cup fresh basil leaves
- 1/4 cup water
- 1 1/2 tsp gelatin powder
- 1 cup crushed butter cookies
- 4 tbsp unsalted butter, melted
Directions:
- Puree strawberries and basil leaves in a blender
- In a saucepan, heat the puree mixture, 1/4 cup of sugar, and 1/4 cup of water over medium heat. Stir occasionally until sugar has dissolved. Remove from heat and let it cool.
- Place 1 1/2 tsp of gelatin powder in a small bowl and mix with 4 tbsp of cold water. Let it rest for 5 minutes
- In a mixing bowl, beat 1/2 cup of heavy cream until soft peaks form
- Once the strawberry mixture has cooled down, pour the gelatin mixture and stir until it dissolves completely
- Slowly add the strawberry mixture to the whipped cream and beat until everything is well combined
- In a separate mixing bowl, combine 1 cup of crushed butter cookies with 4 tbsp of melted unsalted butter
- Press the cookie mixture onto the base of serving glasses
- Pour the mousse mixture over the cookie base and let it chill in the fridge for at least 2 hours
- Serve chilled with fresh strawberries and basil leaves for garnish
