Ingredients:

  • 1 pre-baked pie crust
  • 4 egg whites
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 3 tablespoons cold water
  • 1/2 cup freshly squeezed clementine juice
  • Zest from 2 clementines
  • 1/2 cup unsalted butter, cubed
  • 4 egg yolks

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, beat the egg whites, sugar, cream of tartar, and salt together until stiff peaks form.
  3. Spread the meringue mixture into the pre-baked pie crust and bake for 20-25 minutes or until the meringue is lightly golden.
  4. In a small pot, whisk together the cornstarch and cold water until smooth.
  5. Add the clementine juice, zest, butter, and egg yolks to the pot and mix well.
  6. Cook the mixture over medium heat, stirring frequently until it thickens, around 5-7 minutes.
  7. Remove the pot from heat and pour the mixture into the baked pie crust on top of the meringue.
  8. Allow the pie to cool completely before serving.
