Nems with Vegetables

Ingredients:

  • 12 spring roll wrappers
  • 1/4 cabbage, finely sliced
  • 2 carrots, peeled and cut into matchsticks
  • 1 red bell pepper, finely sliced
  • 1 onion, finely sliced
  • 1 garlic clove, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon cornstarch
  • 1 egg, beaten

Instructions:

  1. In a large mixing bowl, add cabbage, carrots, red bell pepper, onion, garlic, soy sauce, oyster sauce, sugar, salt, and black pepper. Mix well and let it sit for 10 minutes.
  2. In a skillet, heat vegetable oil on medium-high heat. Add the vegetable mixture and stir-fry for 5-7 minutes or until vegetables are cooked through but still firm.
  3. Dilute cornstarch in a table spoon of cold water. add this to the stir fry mixture and cook for additional 2-3 minutes or until sauce thickens.
  4. Remove the skillet from heat and let it cool down for 5 minutes.
  5. Meanwhile take one spring roll wrapper at a time and put it on a flat surface. Place the cooked vegetable mixture at the center of the wrapper leaving space from the edges. Fold the sides of the wrapper towards middle and roll tightly. Brush the edges with beaten egg and seal it properly.
  6. In a deep frying pan, heat oil to 375 F. Deep fry the rolls until they turn crispy and golden brown. Drain on paper towel.
  7. Serve hot with sweet chili sauce or peanut sauce.
