Pasta with Smoked Pancetta Sauce Recipe

Ingredients:

  • 1 pound of pasta
  • 1/2 pound of smoked pancetta, diced
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 4 cloves of garlic, minced
  • 1/4 cup of white wine
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Fill a large pot with water and bring it to a boil. Add pasta and cook it al dente according to package instructions.
  2. While the pasta is cooking, heat olive oil in a large non-stick skillet over medium-high heat. Add diced smoked pancetta and cook for 5-7 minutes or until crispy. Remove pancetta from skillet and set aside.

  6. Add cooked pasta to the skillet and mix well with the sauce. Add crispy smoked pancetta on top of the pasta.
  7. Serve hot and garnish with additional grated Parmesan cheese and chopped parsley.
