Pavlova Log with Red Fruits

Ingredients:

  • 4 large egg whites
  • 1 cup white granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 cup heavy cream
  • 1/2 cup sliced strawberries
  • 1/2 cup raspberries
  • 1/2 cup blueberries

Instructions:

  1. Preheat oven to 300°F (150°C).
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large bowl, beat the egg whites until stiff peaks form.
  4. Add sugar gradually while beating the egg whites until the mixture is glossy.
  5. Add the vanilla extract, white vinegar, and cornstarch to the egg white mixture.
  6. Beat again until the mixture is glossy and stiff peaks form.
  7. Spread the mixture evenly on the prepared baking sheet in a rectangle shape, about 1/2 inch thick.
  8. Bake for about 30 minutes or until the pavlova is crisp on the outside and soft on the inside.
  9. Remove the pavlova from the oven and allow it to cool completely.
  10. Once cooled, top with whipped cream and add the sliced strawberries, raspberries, and blueberries. Spread the fruits evenly on top of the whipped cream.
  11. Gently roll the pavlova log into a spiral shape, making sure the fruits stay inside.
  12. Keep the pavlova log in the refrigerator until ready to serve.
