Pavlova Log with Red Fruits
Ingredients:
- 4 large egg whites
- 1 cup white granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 cup heavy cream
- 1/2 cup sliced strawberries
- 1/2 cup raspberries
- 1/2 cup blueberries
Instructions:
- Preheat oven to 300°F (150°C).
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, beat the egg whites until stiff peaks form.
- Add sugar gradually while beating the egg whites until the mixture is glossy.
- Add the vanilla extract, white vinegar, and cornstarch to the egg white mixture.
- Beat again until the mixture is glossy and stiff peaks form.
- Spread the mixture evenly on the prepared baking sheet in a rectangle shape, about 1/2 inch thick.
- Bake for about 30 minutes or until the pavlova is crisp on the outside and soft on the inside.
- Remove the pavlova from the oven and allow it to cool completely.
- Once cooled, top with whipped cream and add the sliced strawberries, raspberries, and blueberries. Spread the fruits evenly on top of the whipped cream.
- Gently roll the pavlova log into a spiral shape, making sure the fruits stay inside.
- Keep the pavlova log in the refrigerator until ready to serve.
