Ingredients

  • 4 large eggs
  • 1 sheet of puff pastry
  • 2 tbsp of olive oil
  • 1 large onion
  • 1/4 cup of chopped herbs (parsley, oregano, or basil)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Roll out the puff pastry on a floured work surface to 1/4-inch thickness and cut it into 4 circles using a cookie cutter or a cup with a 3-4 inch diameter.
  3. Place each circle of dough into a muffin tin, pressing it down into the bottom and sides.
  4. Next, heat olive oil in a pan over medium heat. Add chopped onion and sauté until the onion is soft, fragrant, and just starting to brown. Add salt, pepper, and chopped herbs to the onions and stir to combine well.
  5. Spoon the onion mixture on top of each pastry shell and make a well in the center of each.
